I remember thinking going vegan meant committing myself to a life lived under a rock eating nothing but carrot sticks and hummus. I thought I wouldn’t be able to eat out and have fun with my food. Oh, the foolishness.
Tonight David and I enjoyed Tijuana Flats. Since I’ve been working so much we’re really trying to make the best of the time we have together. And I think going out to dinner makes for a nice evening

We started with chips and salsa (I ate SO MANY chips!!!). For my entree I ordered a black bean taco salad with no sour cream or cheese and salsa as my dressing. Instead of the greasy taco shell I requested a whole grain tortilla… they brought me three! Tijuana Flats was great about my order’s specifications. We had a fun, healthy and easy night

I know I’ve been slacking from blogging. And I’ve missed you! I’m suddenly working so much and I haven’t figured out how to rearrange the other things in my life… like blogging and studying!
I did want to show you this light dinner I made for us a few nights ago… roasted acorn squash and carrots with kidney beans for me and organic chicken for him. I thought this meal was too pretty to not share! (I usually eat way more than this but I had just devoured a big bowl of cereal!)![]()
Oh… and there has been lots of Holey Donuts!!! I won Marathon Val’s Holey Donuts giveaway a while back and these babies arrived last week. (Most are vegan.) Donuts, donut holes and ooey gooey cinnamon rolls…. it was heavenly, really.
I’ve never eaten so many donuts in my life! These babies are addicting! Luckily they’re made with better ingredients and lower in fat than traditional donuts.
My review? They’re pretty good. I like how they come frozen with dry ice in small boxes. You just throw the boxes directly into your freezer and pull out a few donuts to thaw and/pr microwave whenever needed. I still prefer a Krispy Kreme for taste, but these are still really good! I think the cinnamon rolls are pretty wonderful, too.
Oh, yeah….
To keep up with my marathon training, I ran 8 miles Saturday after 9 hours of work!!! Eight miles and it felt so good…
And then Sunday David and I biked 62 miles.
Did you read that?!?!!?!??!?!
I refueled with donuts for both momentous events.
What is your baked good of choice? What do you think of the healthier donut that is Holey Donuts?

62 miles is AMAZING!!!!!!!!
And so is eating vegan at Tijuana Flats (LOVE how easy it is there!)
sweet run and ride! and refueling with doughnuts is one of my favorites.
YUM tijuana flats! i loved it there when i visited my family in florida! are you going to the foodbuzz festival by any chance??
holey donuts def aren't true donuts
but those cinnamon rolls- heated up! were pretty darn good!!!
If I am craving a sweet baked good I either reach for a doughnut (preferably a chocolate covered, creamed filled one from KK) or some peach cobbler.
Thankfully the nearest Krispy Kreme is 1.5 hours away and my oven is broken so I can't bake peach cobbler every day – otherwise it wouldn't be pretty.
Have to admit I was not a huge fan of the Holey. I mean, I ate em when I got the samples and kinda enjoyed the whole baked good aspect, but yeah would NEVER pay money for them. I rarely eat donuts so I'd rather just have a real one if I need it that badly!
YOU BIKED 62 MILES?@#%#$^?! You are a BEAST, my lady!
I love T Flats! I always have the best service there and the food always tastes really fresh.
62 miles???? That is a long drive let along a bike ride haha. You are amazing
I'm sorry…. my eyes must be playing tricks on me….. did you say SIXTY TWO miles?!?!?!?!? You are AMAZING!!! Hubby and I just got new bikes a couple months ago. I'm EXHAUSTED after 20 miles! You are an inspiration!!!! Oh, and I think Holy Doughnuts are OK but not great.

Baked goods: Pumpkin chocolate-chip muffins (recipe: http://tinyurl.com/klv6gt) and/or banana chocolate-chip muffins (http://tinyurl.com/meknnl). Amazing low-fat, low-cal, high-fiber fuel!
In other news: You made me miss Tijuana Flats so much! Black bean burrito w/low-fat cheese and ww tortilla=best post-run fuel everrr. Actually made me miss Florida — and it's AUGUST!
Woohoo for 62 miles!!! Awesome!
I find Krispy Kreme too sweet though.
The donuts are well deserved.
I love baked goodies too much.
62 miles?? That's just crazy
hehe, good for you!
I love mexican food. I tried making enchiladas recently… I need a better recipe.
Did you just say you biked 62 miles?!! Holy crap. Impressive! But I hope you give yourself some rest now!
I really want to try holey donuts too. I think I asked them for sample, and am waiting for their answer! >.<
62 miles?! WoW!
I love how easy being vegan is. Why didn't I start living this way sooner?
Your Mexican meal looks amazing! Nothing missing there! And in my running rating system, you definitely get a few extra points for running after 9 hours of work!
Great job on that run and ride! Fantastic! The donuts look good, but that is one thing that I find I don't enjoy as much as I used to. I'd much rather have a scone now for some reason.
62 miles?!?!? you are crazy and i love it!!! you so deserve those donuts and mexican!! well, you would have deserved it even without the biking
hope you are feeling better!
You rock my biking socks off! Amazing!
Also, I love Tijuana Flats too! They are such a great quick service place!
