
Happy first week with us, Norman!
Last Monday we picked up Puppy from the shelter.
You all decided Norman should be his name.
Norman had his first bath in the kitchen sink and hiked six miles to Looking Glass Rock.
Having a puppy with three other big dogs and two cats has been easier than expected. We’re crate training Norman and he’s responding really well.

I’m the proudest momma when he does his business outside!

It’s a gloomy Monday morning here in Asheville. I have a to-do list to tackle today, but I couldn’t help but start the week off with a little baking. I’m not one for cookbooks, but Veganomicon has somehow claimed a place close to my heart.
I have two recipes that are permanently bookmarked- Snobby Joes and Banana Bread.
(Here’s a published recipe online. Basically just combine wet ingredients, then add dry. Stir just until blended and bake 40-50 minutes at 350*.)

Eeek! Jack isn’t allowed on the counter! Don’t worry- I didn’t bake him.

I never follow recipes exactly, but this time I really went on a limb and added some mashed butternut squash to the mix.

I also used 1/2 whole wheat flour. And I didn’t have applesauce. So basically i didn’t follow the recipe at all.

My baking pans are still in boxes (I’m not lazy!?), so I went with a mini muffin tin.

The result is quite tasty! I don’t specifically taste the squash, but it does add a hint of extra flavor and a boost of nutrients.

Now I’m off to actually tackle that to-do list and get in a run later!

I’ve seen a lot of banana bread recipes, but I think the butternut-banana combo might be my new favorite!
I put veggies in almost everything I can, but I also make sure to serve them as actual veggies too- just to make sure the people eating them know vegetables can be good (and don’t have to be hidden).

I sneak large amounts of spinach in my pasta dishes to get my husband to eat more veggies

I mostly eat my veggies straight up! I think they’re delicious – most of the time. Load up pasta dishes with squash, zuchinni, onions, mushrooms, in the sauce usually ends up being veges with a little bit of pasta! I do love to sneak them into baked goods such as muffins and cupcakes (made with pumpkin) as well! Your tweak to the recipe sounds great, I’ll have to try it!
I love replacing oil with squash or pumpkin – and when I use pumpkin, sometimes I can almost completely eliminate the sugar, which I totally need right now! This recipe totally looks amazing! Thanks for posting!

Those look really good, and I can never follow a recipe exactly, either. I sneak veggies in to smoothies and baked goods, and sometimes I just eat them because they taste good

When I used to eat more meat, I would finely grate veggies and sneak them into meatloaf. You can barely taste them, if at all!

Aw, what a cute puppy face! And those banana bread muffins look delish! I’m not amazing at mixing veggies in, I usually end up just getting my veggies the old fashioned way.

Norman is settling in so well, and obviously he’s one of the most adorable Blogging Doggies I have ever seen.
I don’t tend to need to sneak veggies into foods as I am a veggie-holic (actually trying to cut down on them due to IBS fibre issues!) but there is an amazing beet chocolate cake recipe my Mum made once…it was vegan too

Norman is soooo adorable!! I am jealous – I want a puppy so badly, but both my fiance and I work, so we just can’t give a puppy the time he/she would deserve.
I think my problem is that I don’t sneak the veggies in, I just eat them plain and boring…not so tasty. The exception is that I love to add cauliflower to almost any Indian rice dish or even mac and cheese.

I just recently went to costco for the first time in ages and well I got a little too excited and bought an enormous amount of butternut squash. This is a perfect recipe for my abundance of squash I currently posses.
