Spaghetti Squash and Yogurt for the Puppies

I swear everything is beautiful in North Carolina. Wednesday morning began with an organic spelt English muffin toasted and smeared with Earth Balance and local blueberry jam. Served with a banana (unpictured) and two glasses of Earth Balance chocolate soy milk (sinfully delicious).

Did you know yogurt is good for dog’s digestive systems? (Some dogs have trouble digesting lactose- just like humans- so test with a small portion first.) Ground flax is great for their coat, too!

I spoil my puppies and often give them yogurt/flax platters for a special treat and nutritional boost!

I mentioned in yesterday’s post that roots hummus just may be the best food on the planet. I reconfirmed that by finishing off today’s container with at least two servings of Terra chips. Mmmmmm.

Emma kept me company as I got some work done. I’m still looking for a job in Asheville, but I’m doing freelance work and touching up the new blog in the meantime.

Before Richard got home from work I snuck in a hilly 4 mile run. My butt really felt those mountains after all the lunges and squats I did yesterday!

I was snacky today. Among many bites of this and bites of that I had a package of Lucy’s Cinnamon Thins cookies. For a dessert food, these have a pretty cool ingredient list!

Richard and I were craving veggies for dinner so I decided it was time for Richard to have his first taste of spaghetti squash.

First, I sliced the raw squash in half and baked the halves face down for about 40 minutes at 375*.

Second, I scraped out the guts. Be careful to just scrape out the stringy insides and seeds… if you start scraping the sides you’ll scrape out the spaghetti!

Lastly I scraped the sides (which has a spaghetti like meat) and mixed with Earth Balance, basil and spices.

Served up with a nutritious salad of mixed greens, tomatoes, broccoli, walnuts, multrigrain croutons, carrots and a ginger dressing. Richard said he didn’t think the squash would be any good but was actually surprised how much he liked it! Spaghetti squash can be topped with tomato sauce, too!

No box of brownies lasts long around me. Shortly after dinner I whipped up this gluten-free, vegan brownie mix.

Nothing like warm brownies when there’s snow falling outside! I think gluten-free products often taste pretty grainy, but this product was yummy! We especially liked the chocolate chips baked in.

I just had spaghetti squash last night for the first time and LOVED it!! so delicious with tomato sauce :)

my favorite dessert to make would have to be homemade cheesecake :) yum!

I just recently introduced my husband to squash too! My dog also really enjoys yogurt…I also let her lick out the ricotta containers when I make pasta dishes too :)

I love making cookies, but I usually just want to eat the dough! Fresh out of the oven is amazing though.
I did not know that about yogurt! Interesting.

Hi Ashley! Your cat looks like a cut out in that picture – more than picture perfect (or is that purrfect?).

I don’t do boxed mixes, but I have been meaning to make a gluten free lemon cake recipe that Erica (@EHRWG) on Twitter has sent to me. But my kitchen is in disarray due to house works. I am singularly obsessed with cookies of any and all variety… Hence my blog name. ;)

I also, however, ADORE spaghetti squash. And am seriously craving it now.
