Touring Downtown Asheville

What a day! Richard and I had a lazy Saturday morning with banana pancakes and then headed to downtown Asheville to explore! We braved the cold to eat our way through the city. It was wonderful!

Yesterday I put out a call for a vegan banana pancake recipe. It’s the one thing I have had trouble with.

Katie saved the day and CREATED a recipe for me!

Vegan Banana Pancakes

Ingredients

  • 2 ripe bananas, mashed
  • 2 tablespoons applesauce (you may not even need this depending on the size of your bananas)
  • 1 cup non-dairy milk (soy, hemp, almond — you pick!)
  • 1 flax egg (1 tablespoon flax meal and 3 tablespoons luke warm water)
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Directions

  1. Prepare flax egg. Whip and side aside.
  2. Combine all wet ingredients adding flax egg last.
  3. Whisk dry ingredients into wet ingredients.
  4. Make your pancakes like normal! (Prob medium heat for a few minutes on each side)

These were delicious! I had some trouble at first because I used non-non-stick pans and apparently didn’t put enough Earth Balance in the pan… so the batter was sticky at first :-P Otherwise, yum!! I also added cinnamon in mine! Thanks, Katie!

Around noon my hot date and I jumped in the car and headed into town.

If Asheville stands for one thing it is local and independent businesses. There are very few chains in downtown, and those often receive a lot of push back from the local fanatics!

Richard and I are two of the same- when we find something we love, we tend to stick with it. Rosetta Kitchen‘s vegan pad thai stole our hearts on our first real date so we make it a point to visit every time we’re near!

I love the self-serve filtered water- straight from a sink!

We shared a large pad thai with a side salad (with local miso dressing). Incredible. As always.

Next stop Asheville lululemon showroom!! Remember encouraging Kate from the post Coffee with Kate? That’s her rocking the scarf below!

I love how they showcase local studios on a giant chalk board!

Eventually we had to say goodbye to the fun lululemons. We proceeded on our exploration, stopping in just about every store of cafe just to see what it’s all about. Vintage, boutique, organic, tea houses, chocolatiers… we saw it all!

Asheville is apparently also the home of free condoms. This was front and center on a table at a coffeehouse. Rosetta’s even has buckets in their bathrooms!

To complete reliving our “first date,” we couldn’t help but stop at Laughing Seed Cafe for dessert!

Vegan and organic peanut butter cookie with vegan raw vanilla ice cream. Amazing! The cookie is so moist with peanut bits throughout and the ice cream is so fresh-tasting!

I mentioned earlier in the day that I was craving a vegan cupcake and Richard wouldn’t rest until my craving was fulfilled (even with our big dessert minutes before!).

I ended up leaving with two Classic Coconut Cake cupcakes with cream cheese icing… and ate both before writing this post!

What a day! Now I’m settling on the couch with Mamma Mia on TV, sleeping puppies on my lap and a big bowl of cereal. We have a big day tomorrow!

Awww Asheville looks adorable! Kind of reminds me of Montpelier, Vermont with the lack of chain stores and local pride. I love me some independent, crunchy little cities.

Hmm I think my favorite city to explore is NYC. My dad’s family is from the city and he grew up there, so I’m usually there a couple times per year to see family and such. Even so, I never run out of new things to see and do- it’s just too big and diverse!

Great representation of Asheville! Short Street is amazing – the hummingbird cake and some concoction with lavender frosting are both delicious!
As per your latest post – check out Mamacita’s – there’s a vegan sweet potato and kale burrito that will make you a very happy vegan.

My fave city is nyc definitely!!! We eat cupcakes 24/7 when I visit the city with my fiance!
