
Sundays are always my favorite day of the week and this Sunday was no exception.

Morning began with three waffles with organic maple syrup and a GoodBelly shot. Then we headed off to look at a local vineyard, a possible venue for our June 25 wedding! The view was spectacular but there are still some parts of the venue that we’re unsure of.

It’s official- we’re Asheville addicts. We love the city and at least once every weekend we end up downtown just to eat (and eat and eat) and browse the local shops. Lovely.

Today we stopped for lunch at Green Light Cafe, a little vegetarian restaurant that opened not too long ago. We browsed the menu online last night and our mouths were watering ever since!

After a lot of deliberation I settled on the Sweet Potato Patties. Everything looked incredible!

Green Light offers free chlorophyl water- apparently full of oxygen! It is green but tasted normal.

Hot date? Check!

My entree came with a fresh salad with peanut sesame dressing. So yummy.
Finally, my sweet potato patties covered in oats and a peanut sauce with grainy brown rice and perfect kale. The sweet potatoes were soft and sweet and perfectly unique. The basic brown rice and kale made it feel like a solid home cooked meal. My goodness we will be back.

Aaaaand I’m officially addicted so we stopped at Earth Fare so I could get another carob cookie. Delicious.

I spent most of the evening cooking a few dishes to reheat over the week. Last week seemed really busy so I’m working on preparing for the week as much as I can ahead of time. The meal prep was a success…. not including the busy kitchen

Have you been to GreenLife in Asheville yet? It’s basically a smaller Whole Foods, and it’s actually owned by Whole Foods! It’s a lovely little grocery on Merrimon! You should check it out!
Those sweet potato patties sound so interesting! I’m jealous of all the veg options you have there!
I try to make extras of dinner – especially soups – for leftovers for lunches or dinner in the days following.
Seriously, must. go. to. Asheville. It looks amazing!
I relax as much as possible! And make to-do lists/schedules so I don’t have to worry about fitting everything in.
I am thinking of heading to UNC Asheville in the fall for a semester…and your posts keep convincing me more & more
I prep for the upcoming week of work & school by grocery shopping, meal planning (a little), packing up lunches & snacks, getting some sleep, and cleaning my house!
