Lovely Fall Day

It was another beautiful day in Asheville. Mid-60′s, wind and tons of people exploring the city.

We helped friends move into their new place downtown (hi Shaun and Liz!) this morning. Before heading home we stopped by a farmer’s market to get some fresh apples. This stand had varieties of apples that I’ve never heard before like King Lush and Jimmy Gold.

The farmer cut off tastes of different apples and handed them to us. We settled on a variety bag of pink lady’s and our other favorites. Yum!

We also grabbed a bag of honey pecans. I’m a sucker for good nuts. (TWSS)

The beautiful fall day kept me thinking about this fall recipe. I sipped on two glasses of merlot while cooking and throughout the night.

I have a stool set up in the kitchen so I can cook and do dishes without having to lean on my left leg for too long.

The Butternut Squash and Cranberry Maple Millet (I used quinoa instead of millet) just screams fall.

I made a little extra of the dressing for extra sweetness :-)

The finished product was amazing. Its flavor is sweet but tangy and oh so nutritious. I’m definitely making this for Thanksgiving!

All the photos in this post scream fall! I love it, as well as your lovely apron :)

I also don’t think I have ever told you, but I’ve been loosely following your accident/recovery on Facebook and twitter, and admire your attitude and positivity so much! Sometimes I’ll read an update and think, well if she’s making it a great day after such a crappy thing happened to her, I can make it a great day, too!

You look great! Being able to do stuff on your own definitely is huge part of recovery. Cooking and shopping at the farmer’s market? Sounds like a great fall day to me ;)

I’m so glad you are able to start doing the things you love, once again. It is so wonderful to see how upbeat you’ve been through this trying time (I’m sure it wasn’t easy!). I’m glad to see you smiling again!
