Vegan Paleo Crunch Bars

We had such a nice weekend with the kids! I hope you guys had a great weekend too!

One of my biggest obstacles in my diet exploration is what to eat when I wake up and before a workout. I prefer something “carby” and something that digests well.

These bars fit the bill!

Here are the ingredients:

1/2 cup Raw Pumpkin Seeds
1/2 cup Pecans (I used walnuts)
1/2 cup Shredded (raw, unsweetened) Coconut
3/4 cup Almond Meal
1/2 cup Raw Sunflower Seeds
tsp Cinnamon
1 tsp Pure Vanilla Extract
1/4 cup Coconut Oil (plus a little to grease the pan)
1/4 cup Honey (I used 1/3 cup)

Here is the recipe. I highly recommend making these bars… they’re prefect for before a workout, crumbled up with a spoon or even for dessert.

The final bar is super moist and crumbly with a light coconut flour and 100% deliciousness.

They sound good, but if you add honey, they aren’t vegan. Could agave be substituted?

Looks so crunchy! I love nuts, but I refrain eating it this past few days because I can feel that my joints are bit achy. I think my arthritis is back again..

They sound good but that’s a lot of fat to toss down before a workout! I’d probably make them for a treat sub. Agave should veganize them.
