I love eating paleo. I literally miss nothing (other than certain conveniences) and I feel great. I plan on relaxing a little after the challenge, but I want to keep our diets mostly paleo. We feel better without legumes, grains and added sugars, and we’re eating so much high-nutrient foods in their place. I’m still investigating if dairy irritates me. I think it may cause my skin to breakout.
Richard is on the paleo challenge too (although he does eat meat). He was in great shape and lean to start out (he measured in at 8% body fat), but he says he feels better, too. I just think he misses the beer

Cleaning up our diet has led to us cleaning up other areas in our lives, too. After seeing how much filler we consumed in our diets, we’ve been looking at how our house is organized, financial goals and how we spend our time differently. I’m happy to report our kitchen is cleaner and more organized than ever!
Several readers have asked me to elaborate on what I’m eating as a vegetarian on paleo. I’ve been snapping photos here and there, although I wish I would have caught more veggie-based snacks and meals. I do eat them!
Also, I eat about six times a day.
Expect recipes and a post about helpful paleo essentials soon.

Paleo Snacks:
- larabars (peanut-free flavors; coconut is my favorite!)
- avocado
- apple and sunflower seed butter
- dried fruit (without sugar)
- coffee (with a dash of heavy whipping cream or almond milk)
-So Delicious (with organic agave; definitely a paleo treat!)
What’s not included in the photos:
- raw veggies with hard boiled eggs
- portioned raw nuts (cashews are my favorite)
- green smoothies

Paleo Meals:
- left is spinach, avocado, sweet potato, walnuts, hard boiled egg and a drizzle of balsamic vinegar
- top right two photos are from dinner at a pizzeria: two eggs and sauteed veggies in marinara
- vegetarian paleo Chipotle: salad (no dressing), double fajita, double mild salsa, guac
- bottom left: paleo protein pancake (in blender: two eggs, scoop of protein powder, half sweet potato, few scoops of shredded carrots; cooked in skillet with coconut oil; topped with a bit of honey)
What’s not included in the photos:
- green smoothie with veggies, fruits and a scoop of protein powder

I love avacado, but every time I throw one into a smoothie or onto a salad I show an increase in bodyfat. kills me. My newfound “whole foods vegan” approach looks almost exactly like this, except without the eggs or protein powder.

So I’m curious…what sort of paleo challenge is your box doing? When I think Crossfit Paleo challenge, I automatically assume Whole30, but much of this isn’t Whole30 compliant. Not that I mind (I prefer the Health Bent philosophy, myself), but just curious.
I just found your blog (well. re-found it).. and I love it! I too am a vegetarian.. and trying paleo that way.. or not really paleo I have been told but less carbs and processed foods.. either way I feel better!
I have slipped up in my workouts due to buying a home and moving.. but I am going to hit it soon. I will try to find a crossfit gym but for now I have to do my own stuff in the gym. it works.

Awesome! I like seeing this because I wanted to try a paleo challenge but had no idea how to do it as a vegetarian! I’ve been doing a different challenge the last 7 days – no sugar and no alcohol. I read ‘I quit sugar’ and have worked to cut ALL sugar out of my diet, including fruit, for 8 weeks and will then add it back in. I just went crazy eating slices of rutabaga after lunch because my sweet tooth was hollering and after 7 days of no sugar rutabaga tasted sweet! I think I would give this paleo challenge a try too though! I like the idea of eating more whole foods and less dairy. Would you say most of your protein is coming from eggs and protein powder now?

Thanks so much for posting this. It’s great to see that you can be veggie and Paleo. Honestly I think this lifefstyle would help me so much, but I’m just not willing to eat eggs – emotionally, I can’t do it. I wish there was a vegan compromise on Paleo
