It felt so good to get in my first WOD of the year yesterday! I made it for the 6am class and we started off with max back squats.
I was chatting and not focused at all and totally squatted too low and got stuck under the weight. I tried to throw the barbell back but instead it rolled down my spine. Ouch. I had no desire to squat more after that.

After: 200m walking lunges
I finished in 17:04. After the walking lunges my friend Erica and I did some pull up, toes to bar and handstand work. Then I ran six miles home and got to know my butt muscles in a whole new way.
Today marks day three of the 60 day paleo challenge. I woke up feeling a-ma-zing yesterday after a full day of paleo Monday. I’ve kept on track except last night when I had this weird boredom/FOMO feeling and ate peanut butter. Aaaaaand life goes on.
The next 60 days includes a lot of vegetables and whole foods that need preparation. I always have hard boiled eggs in the fridge, but for the challenge I’m taking it further. We buy or prep most of our veggies so there’s no excuse to not throw an extra handful of veggies in a dish.
I l-o-v-e the convenience and tastiness of little egg muffins, especially when I use the right spices and/or something juicy like a salsa. It’s this easy: mix veggies (this one was just broccoli and carrots), eggs and spices in a food processor. Pour into muffin pans (greased with coconut oil) and bake at 350* ~20 minutes. Perfect for snacks or meals on the go.
My favorite quick meal is eggs and veggies in a pan with coconut oil. Yesterdays lunch above was topped with 1/2 an avocado and sriracha. Yum.
I’m also finding new ways to fulfill my sweet tooth with clean, paleo-approved foods. The photo above is simply frozen banana, frozen berries, a dash of almond milk and protein powder blended in the VitaMix. All the taste of ice cream without the sugar coma.
